Ingredients
1 ½ pounds boneless skinless chicken breasts or thighs, cut into bite-sized pieces
1 tablespoon olive oil
2 tablespoons unsalted butter (divided)
4 cloves garlic, minced
½ teaspoon red pepper flakes (adjust to taste)
½ teaspoon Italian seasoning
¼ cup lemon juice
½ cup chicken broth
Salt and black pepper to taste
1 tablespoon chopped fresh parsley (for garnish)
1 cup jasmine or long grain white rice
2 tablespoons unsalted butter
2 cloves garlic, minced
2 cups chicken broth
½ cup heavy cream
½ cup freshly grated parmesan cheese
2 tablespoons chopped chives or parsley
Salt and black pepper to taste
Instructions
1. Cut the chicken into chunks and season with salt, pepper, and Italian seasoning.
2. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Sear chicken until golden and cooked through. Set aside.
3. In the same skillet, lower the heat. Add remaining butter, garlic, and red pepper flakes. Sauté for 1 minute.
4. Pour in lemon juice and chicken broth. Scrape up the browned bits. Simmer 2-3 minutes.
5. In a separate pot, melt butter and sauté garlic for the rice. Stir in rice and toast briefly.
6. Add chicken broth, bring to a boil, then simmer covered until rice is tender.
7. Stir in cream, parmesan, and chives. Season with salt and pepper.
8. Return chicken to the skillet and spoon sauce over it. Serve over creamy rice with extra herbs if desired.
Notes
Use freshly grated parmesan for the creamiest texture and richest flavor.
If your sauce reduces too much, add a splash of broth to loosen it before serving.
For a juicier cut, chicken thighs are a great option over breasts.
