Chicken Scampi with Garlic Parmesan Rice is a hearty, flavorful meal featuring golden-seared chicken in a lemony garlic butter sauce paired with creamy Parmesan-infused rice. It’s easy enough for weeknights but rich enough to impress.
Ingredients
2 large chicken breasts
1 tablespoon olive oil
2 tablespoons butter (divided)
3 garlic cloves, minced
1 tablespoon lemon juice
⅓ cup dry white wine (or chicken broth)
½ teaspoon crushed red pepper flakes (optional)
Salt and black pepper, to taste
1 tablespoon chopped fresh parsley
1 tablespoon butter

2 tablespoons finely minced onion
1 cup long grain white rice
2 ¼ cups chicken broth
½ cup grated Parmesan cheese
Instructions
1. Pat chicken breasts dry and season with salt, pepper, and red pepper flakes. Pound slightly for even thickness.
2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear chicken breasts 4–5 minutes per side until golden and cooked through. Remove and keep warm.
3. In the same pan, reduce heat to medium. Add remaining butter and garlic. Sauté for 30 seconds. Add wine or broth and simmer for 2–3 minutes. Stir in lemon juice and parsley. Simmer 1 more minute.
4. In a separate saucepan, melt butter. Sauté garlic and onion until soft. Add rice and stir 1 minute. Pour in broth, bring to boil, then cover and simmer 18 minutes or until rice is tender.
5. Stir Parmesan into cooked rice until creamy.
6. Slice chicken and plate over garlic Parmesan rice. Drizzle with scampi sauce and top with parsley. Serve hot.
Notes
Always rest the chicken for 5 minutes before slicing to lock in juices.
For extra creaminess, stir in 1–2 tablespoons of cream with the Parmesan.
Substitute orzo or jasmine rice for a twist in texture.
