Chicken Scampi with Garlic Parmesan Rice

Description

This savory skillet meal features golden chicken bites in a buttery garlic lemon sauce, served over creamy parmesan rice. It’s the perfect weeknight dinner that’s both comforting and bright.


Ingredients

2 boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and black pepper to taste

1 tablespoon olive oil

2 tablespoons butter

3 garlic cloves, minced

1/4 teaspoon crushed red pepper flakes (optional)

2 tablespoons lemon juice

1 cup long-grain white rice

2 cups chicken broth

1/2 cup freshly grated parmesan cheese

2 tablespoons fresh chopped parsley


Instructions

  1. Season the chicken with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken pieces for 3–4 minutes per side until golden and cooked through. Set aside.
  3. In the same skillet, reduce heat to medium. Add butter, garlic, and crushed red pepper flakes. Sauté for 30 seconds.
  4. Deglaze with lemon juice, scraping up browned bits. Remove from heat.
  5. In a separate saucepan, bring chicken broth to a boil. Stir in rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18 minutes.
  6. Once rice is tender, stir in parmesan cheese and fluff with a fork.
  7. Return chicken to skillet to warm through. Serve over parmesan rice.
  8. Garnish with parsley and a squeeze of lemon if desired.
