This savory skillet meal features golden chicken bites in a buttery garlic lemon sauce, served over creamy parmesan rice. It’s the perfect weeknight dinner that’s both comforting and bright.
Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and black pepper to taste
1 tablespoon olive oil
2 tablespoons butter
3 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes (optional)
2 tablespoons lemon juice
1 cup long-grain white rice
2 cups chicken broth
1/2 cup freshly grated parmesan cheese
2 tablespoons fresh chopped parsley
Instructions
- Season the chicken with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken pieces for 3–4 minutes per side until golden and cooked through. Set aside.
- In the same skillet, reduce heat to medium. Add butter, garlic, and crushed red pepper flakes. Sauté for 30 seconds.
- Deglaze with lemon juice, scraping up browned bits. Remove from heat.
- In a separate saucepan, bring chicken broth to a boil. Stir in rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18 minutes.
- Once rice is tender, stir in parmesan cheese and fluff with a fork.
- Return chicken to skillet to warm through. Serve over parmesan rice.
- Garnish with parsley and a squeeze of lemon if desired.
