Ingredients
2 large chicken breasts or cutlets
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
3 tbsp butter
2 cups heavy cream
3 cloves garlic, minced
12 oz cooked spaghetti
2 tbsp fresh parsley, chopped
1/2 cup all-purpose flour
2 large eggs, beaten
3 tbsp olive oil
Salt and pepper to taste
Instructions
1. Pat chicken breasts dry and pound to even thickness.
2. Dredge each piece in flour, dip in beaten eggs, then coat with breadcrumbs mixed with Parmesan.
3. Heat olive oil in skillet over medium heat and cook chicken until golden and internal temp reaches 165°F.
4. In saucepan, melt butter, sauté garlic until fragrant, then add heavy cream. Simmer gently.
5. Stir in Parmesan, mozzarella, and cheddar until smooth.
6. Toss cooked spaghetti in sauce until fully coated.
7. Serve chicken alongside pasta, spoon extra sauce over chicken, garnish with parsley, and serve immediately.
