Description

These Chili Garlic Butter Chicken Bites with Creamy Cajun Corn Alfredo Twists are a flavor-packed weeknight meal. Tender chicken bites glazed in a spicy-sweet chili garlic butter, paired with rotini pasta tossed in a creamy Cajun Alfredo sauce with juicy corn. It’s comforting, quick, and filled with bold, savory-sweet heat.


Ingredients

1 lb chicken breast or thighs, cubed

2 tbsp oil

4 tbsp butter, divided

3 cloves garlic, minced

1 tbsp chili paste

1 tbsp honey

1 cup heavy cream

1 cup corn kernels (fresh or thawed frozen)

1 1/2 tsp Cajun seasoning (plus more to taste)

8 oz rotini pasta

1/2 cup grated Parmesan cheese

2 tbsp chopped fresh parsley

2 tbsp chopped green onions

Salt and pepper, to taste


Instructions

1. Heat a skillet over medium-high heat with oil. Add cubed chicken, season with Cajun seasoning, and cook until golden brown, about 5–7 minutes. Remove and set aside.

2. In the same skillet, melt 2 tbsp butter. Add garlic and chili paste, cook for 1–2 minutes. Stir in honey, return chicken, and toss to coat in glaze. Set aside.

3. Cook rotini pasta in salted water according to package instructions. Drain and set aside.

4. In a saucepan, melt remaining 2 tbsp butter over medium heat. Add garlic (optional), cream, and Cajun seasoning. Simmer for 1 minute. Add corn and Parmesan. Stir until thickened.

5. Toss pasta in Alfredo sauce. Let simmer 1 minute to absorb flavor.

6. Plate creamy pasta and top or serve beside chili garlic chicken. Garnish with parsley and green onions. Serve hot.

Notes

For extra creaminess, add 2 oz cream cheese into the Alfredo sauce while it simmers.

You can substitute shrimp or tofu for chicken for a pescatarian or vegetarian version.

Always reserve a little pasta water to loosen the sauce if it thickens too much.
