Ingredients

1.5 lbs boneless skinless chicken thighs or breasts

3 tablespoons fresh lime juice

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon smoked paprika

2 garlic cloves, minced

1 tablespoon honey

Salt and black pepper to taste

3 cups cooked white rice

1 avocado, sliced

1/2 cup canned or fresh corn kernels

1/2 red bell pepper, diced

1/2 green bell pepper, diced

2 tablespoons fresh cilantro, chopped

1 teaspoon sesame seeds


Instructions

  1. Make the Marinade: In a bowl, whisk together lime juice, olive oil, chili powder, paprika, garlic, honey, salt, and pepper.
