These Chocolate Covered Dates are stuffed with almond butter, dipped in dark chocolate, and sprinkled with crushed nuts. It’s an easy-to-make, naturally sweet treat that’s rich, chewy, and crunchy all at once. Perfect for snacking, gifting, or a healthier dessert option.
Ingredients
12 Medjool dates, pitted
⅓ cup almond butter (or any nut butter)
½ cup dark chocolate chips or chunks
1 teaspoon coconut oil
¼ cup chopped nuts (pistachios, almonds, walnuts)
2 tablespoons shredded coconut (optional)
Instructions
- Slice each date lengthwise and remove the pit, keeping them intact.
- Fill each date with about 1 teaspoon of almond butter.
- Chill the filled dates in the fridge for 10-15 minutes.
- In a microwave-safe bowl, melt the dark chocolate with coconut oil in 30-second intervals, stirring until smooth.
- Dip each date halfway into the chocolate. Let excess drip off.
- Place on parchment paper and sprinkle with chopped nuts and/or coconut.
- Chill until chocolate sets, about 20-30 minutes.
