Ingredients
Brownie Base:
1/2 cup (1 stick) unsalted butter
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
Chocolate Mousse:
1 cup heavy cream
6 oz bittersweet chocolate, chopped
2 tbsp powdered sugar
Whipped Cream Layer:
1 cup heavy whipping cream
2 tbsp powdered sugar
1/2 tsp vanilla extract
Ganache Topping:
1/2 cup heavy cream
4 oz semi-sweet chocolate, chopped
Optional Toppings:
Cocoa powder for dusting
Chocolate shavings or curls
Instructions
- Make the Brownie Base:
- Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment.
- Melt butter, stir in sugar. Beat in eggs and vanilla.
- Mix in cocoa powder, flour, and salt until just combined.
- Pour into pan and bake 20-25 minutes. Cool completely.
- Prepare the Chocolate Mousse:
- Melt chocolate and let cool slightly.
- Whip cream with powdered sugar to stiff peaks.
- Fold chocolate into cream. Spread over brownie base. Chill 1 hour.
- Add the Whipped Cream Layer:
- Whip cream, sugar, and vanilla until soft peaks form.
- Spread over mousse. Chill while preparing ganache.
- Top with Ganache:
- Heat cream until steaming. Pour over chocolate and let sit 2 mins.
- Stir until smooth. Cool slightly. Pour over whipped cream layer.
- Chill until fully set, about 2 hours.
- Garnish and Serve:
- Dust with cocoa powder, add chocolate shavings.
- Slice with a warm knife for clean layers.
