Ingredients
2 cups heavy cream
5 oz dark chocolate (at least 60% cocoa), chopped
1/3 cup granulated sugar
1 tablespoon fresh orange zest
1/4 cup fresh orange juice
pinch sea salt
Instructions
1. In a medium saucepan, combine the heavy cream and sugar. Bring to a gentle simmer over medium heat, stirring to dissolve the sugar.
2. Stir in the orange zest and let it simmer gently for 2–3 minutes to infuse flavor.
3. Remove the pan from heat. Add the chopped chocolate and stir until fully melted and smooth.
4. Stir in the orange juice and sea salt until completely combined.
5. Strain the mixture through a fine mesh sieve into a bowl or pitcher to remove any zest or solids.
6. Pour into ramekins, glasses, or jars. Refrigerate for at least 4 hours or overnight to set.
7. Optional: Before serving, top with whipped cream, chocolate shavings, or a thin slice of candied orange.
Notes
For the smoothest result, strain the mixture before chilling to remove zest bits.
Make sure the chocolate is fully melted before adding juice to avoid splitting.
Chill the posset overnight for the best set and deeper flavor.
