Ingredients
For the Roll-Ups:
8 slices of white or brioche bread (crusts removed)
3 tablespoons softened butter
3 tablespoons granulated sugar
1 ½ teaspoons ground cinnamon
For the French Toast Coating:
2 large eggs
¼ cup milk
1 teaspoon vanilla extract
For the Glaze:
½ cup powdered sugar
2 tablespoons melted butter
1–2 tablespoons milk (to achieve desired consistency)
½ teaspoon vanilla extract
Instructions
- Prepare the Bread: Remove the crust from each slice of bread and use a rolling pin to flatten each slice.
- Add the Cinnamon Filling: Spread softened butter on each slice of bread. Combine the sugar and cinnamon in a small bowl, then sprinkle the mixture generously over the buttered bread.
- Roll Them Up: Roll each slice tightly into a log and place it seam-side down.
- Prepare the Coating: In a shallow bowl, whisk together eggs, milk, and vanilla extract.
- Cook the Roll-Ups: Heat a non-stick skillet over medium heat and lightly grease with butter. Dip each roll-up in the egg mixture, ensuring full coverage, then cook seam-side down. Turn the rolls to cook each side until golden brown and crispy (about 2-3 minutes per side).
- Add the Glaze: While roll-ups are cooking, whisk together powdered sugar, melted butter, milk, and vanilla extract to make the glaze. Drizzle the glaze generously over the cooked roll-ups before serving.
- Serve and Enjoy: Enjoy warm, with extra cinnamon or powdered sugar if desired.
