Ingredients
2 tablespoons olive oil
2 tablespoons butter
1 ½ pounds beef stew meat, cut into chunks
1 cup diced carrots
1 cup green peas
1 cup sliced mushrooms
1 medium onion, diced
3 cloves garlic, minced
2 cups beef broth (low sodium)
2 tablespoons tomato paste
3 tablespoons all-purpose flour
1 teaspoon fresh thyme leaves
1 sheet puff pastry, thawed
1 egg, beaten (for egg wash)
Salt and pepper, to taste
Instructions
1. Heat olive oil and butter in a large Dutch oven or deep skillet over medium-high heat.
2. Pat beef dry and season with salt and pepper. Sear in batches until browned. Remove and set aside.
3. Add onion to the pan and cook until soft. Add garlic and mushrooms; cook until mushrooms release moisture and brown.
4. Stir in tomato paste and cook for 1–2 minutes.
5. Sprinkle flour over the mixture, stirring for 1 minute to cook off raw flavor.
6. Slowly pour in beef broth while whisking. Return beef to pan and add thyme. Simmer covered for 30–40 minutes until tender.
7. Add carrots and cook for 10 minutes. Stir in peas during the last few minutes.
8. Preheat oven to 400°F (200°C). Transfer filling to a deep baking dish.
9. Roll puff pastry to fit over dish and lay it on top. Cut slits in the center for steam. Brush with egg wash.
10. Bake for 25–30 minutes or until golden and puffed. Let rest 5 minutes before serving.
Notes
For even richer flavor, add a splash of red wine to the gravy while simmering.

For best results, let puff pastry fully thaw but still cold before rolling it out.
