Ingredients

4 bone-in, skin-on chicken thighs

Salt and black pepper to taste

2 tablespoons olive oil

3 tablespoons Dijon mustard

2 tablespoons whole grain mustard

1/4 cup honey

2 tablespoons apple cider vinegar

4 cloves garlic minced

1 teaspoon paprika

Fresh parsley chopped for garnish


Instructions

1. Pat chicken thighs dry and season both sides with salt, pepper, and paprika.

2. In a skillet over medium-high heat, sear the chicken thighs skin-side down for 5–7 minutes until golden. Flip and cook the other side for 3 minutes. Remove from heat.

3. In a bowl, whisk together Dijon mustard, whole grain mustard, honey, vinegar, and garlic.

4. Pour the sauce over the chicken in the skillet, coating each piece well.

5. Bake at 375°F (190°C) for 25–30 minutes or until the internal temperature reaches 165°F.

6. Let rest for 5 minutes, then garnish with chopped parsley and spoon extra sauce over the top.

Notes

For crispier skin, broil for 2–3 minutes at the end of baking.

Make it spicier by adding a pinch of cayenne to the sauce.
