A cozy, classic one-pot meal made with ground beef, tender macaroni, and a rich tomato sauce. Perfect for busy weeknights or a comforting weekend dinner. Quick to prepare and easy to clean up!
Ingredients
1 pound ground beef
1 medium yellow onion, diced
3 cloves garlic, minced
1 can (15 oz) diced tomatoes, with juices
1 can (15 oz) tomato sauce
3 cups beef broth
2 cups elbow macaroni, uncooked
2 bay leaves
1 teaspoon Italian seasoning
Salt and pepper, to taste
1 cup shredded cheddar cheese (optional)
Instructions
1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it apart with a spoon. Drain excess fat if needed.
2. Add diced onion and minced garlic. Sauté for 3–4 minutes until softened and aromatic.
3. Stir in diced tomatoes, tomato sauce, bay leaves, Italian seasoning, salt, and pepper. Mix well.
4. Pour in the beef broth and bring the mixture to a light boil.
5. Add the uncooked elbow macaroni. Stir, cover, and reduce heat to a simmer. Cook for 15–20 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
6. Remove bay leaves. Stir in shredded cheddar cheese or sprinkle on top before serving, if desired.
Notes
To avoid mushy pasta, check for doneness at 15 minutes and stir occasionally.
For a lighter version, use ground turkey and low-sodium broth.
Let the goulash sit for 5–10 minutes before serving to thicken the sauce.
