Description
A nostalgic, no-bake dessert salad made with pistachio pudding, pineapple, mini marshmallows, and whipped topping. Perfect for holidays, potlucks, or when you’re craving something retro, light, and delightfully green.
Ingredients
1 package (3.4 oz) instant pistachio pudding mix
1 can (20 oz) crushed pineapple with juice
1 ½ cups mini marshmallows
1 tub (8 oz) Cool Whip, thawed
½ cup chopped pecans
Optional: maraschino cherries for garnish
Instructions
1. In a large mixing bowl, stir together the pistachio pudding mix and entire can of crushed pineapple with juice until fully combined and slightly thickened.
2. Fold in the Cool Whip gently using a spatula until the mixture is smooth and airy.
3. Stir in the mini marshmallows and chopped pecans until evenly distributed.
4. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld and the marshmallows to soften.
5. Garnish with extra pecans and maraschino cherries before serving, if desired.
Notes
Be sure to use instant pudding mix, not cook-and-serve, to avoid needing to heat the mixture.
For a richer texture, let the salad chill overnight—it only gets better.
If using fresh whipped cream instead of Cool Whip, serve within the same day for best texture.
