This Cottage Cheese Banana Pudding is a lightened-up take on a beloved classic. With layers of whipped cottage cheese, vanilla pudding, ripe bananas, and crushed vanilla wafers, it offers a delicious balance of creaminess and crunch—all while sneaking in a bit of extra protein. Ingredients

1 1/2 cups cottage cheese (full-fat or 2%)

1 package (3.4 oz) vanilla instant pudding mix

1 1/2 cups cold milk

1 tub (8 oz) Cool Whip or whipped topping

3 ripe bananas, sliced

1 1/2 cups crushed vanilla wafers (or graham crackers)

1/4 cup crushed nuts (optional)


Instructions

  1. Whip the Cottage Cheese: Blend the cottage cheese in a food processor until completely smooth and creamy. Scrape the sides as needed.
  2. Prepare the Pudding Base: In a bowl, whisk together the pudding mix and milk. Let it thicken slightly.
  3. Combine: Fold the whipped cottage cheese into the pudding. Then gently fold in the Cool Whip.
  4. Layer the Dessert: In a trifle dish or dessert cups, alternate layers of crushed wafers, pudding mixture, and banana slices.
  5. Top and Chill: Finish with banana slices, extra wafer crumbs, and optional nuts. Chill for at least 1 hour before serving.
