Description
This Cottage Cheese Flatbread is soft, fluffy, and topped with a whipped cottage cheese spread, drizzled in olive oil, and sprinkled with herbs. Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1 pinch salt
1/2 cup Greek yogurt
1/2 cup full-fat cottage cheese, whipped
1 tablespoon olive oil
1 teaspoon dried oregano or thyme
Optional: 1/4 teaspoon garlic powder or crushed red pepper
Instructions
1. In a bowl, mix together the flour, baking powder, and salt.
2. Stir in the Greek yogurt until a sticky dough forms.
3. Knead on a lightly floured surface for 2–3 minutes until smooth.
4. Divide the dough into two equal portions and roll into ovals about 1/4-inch thick.
5. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
6. Bake the plain flatbreads for 6–8 minutes until puffed and slightly golden.
7. Remove from the oven and spread whipped cottage cheese on each flatbread.
8. Drizzle with olive oil and sprinkle with herbs and optional spices.
9. Return to the oven and bake for another 5–7 minutes until bubbly and crisp at the edges.
10. Let cool slightly before slicing and serving warm.
Notes
For best results, use full-fat cottage cheese and whip it until smooth.
Avoid overbaking to maintain a soft, chewy center.
Add fresh toppings like tomatoes or herbs after baking for extra flavor.
