Ingredients

2 medium sweet potatoes peeled and diced

1 tablespoon olive oil

Salt and pepper to taste

1 pound ground beef (85% lean)

1 teaspoon chili powder

0.5 teaspoon cumin

0.5 teaspoon smoked paprika

0.25 teaspoon garlic powder

Salt and pepper to taste

1 cup cottage cheese

1 ripe avocado sliced

2 cups baby spinach or greens of choice

2 tablespoons chopped green onions

Fresh lime wedges optional for serving


Instructions

1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, turning halfway through until golden and tender.

2. Heat a skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.

3. Season beef with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Cook 2–3 more minutes to blend flavors.

4. In serving bowls, layer a base of spinach or greens. Top with beef, roasted sweet potatoes, sliced avocado, and cottage cheese.

5. Garnish with chopped green onions and serve with lime wedges if desired.

Notes

Roast the sweet potatoes in a single layer for even browning and caramelization.
