Ingredients
1 cup cottage cheese
1/4 cup natural peanut butter
2 tablespoons maple syrup
1/2 teaspoon vanilla extract
Pinch of sea salt
Optional toppings: melted dark chocolate, chopped roasted peanuts
Instructions
1. Add cottage cheese, peanut butter, maple syrup, vanilla extract, and sea salt to a blender or food processor.
2. Blend on high until completely smooth, about 1–2 minutes.
3. Taste and adjust sweetness or salt as needed.
4. Spoon the mousse into serving glasses or ramekins.
5. Chill in the refrigerator for at least 1 hour.
6. Before serving, garnish with chocolate drizzle and chopped peanuts.
Notes
Use a high-speed blender for the smoothest texture.
For a sweeter version, increase maple syrup or add a bit of banana.
If using salted peanut butter, reduce or skip the added salt.
