Ingredients
1 cup cottage cheese
4 large eggs
1 cup shredded sharp cheddar cheese
1 ½ cups cooked spinach (fresh or frozen, squeezed dry)
¼ cup milk
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon garlic powder
¼ cup grated parmesan or crumbled feta (optional)
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9-inch pie dish or oven-safe skillet.
2. Prepare the spinach: thaw and squeeze out liquid if frozen, or sauté fresh spinach until wilted. Let cool.
3. In a large mixing bowl, whisk together eggs, cottage cheese, milk, salt, pepper, and garlic powder until smooth.
4. Stir in the spinach, cheddar, and optional parmesan or feta until evenly combined.
5. Pour mixture into the greased dish and smooth the top.
6. Bake for 35–40 minutes until golden and the center is set. A knife inserted should come out clean.
7. Cool for 10 minutes before slicing. Serve warm or refrigerate for later.
Notes
Be sure to squeeze all moisture from spinach to prevent sogginess.
