Description

Ingredients

12 oz spaghetti or fettuccine

3 tbsp olive oil or unsalted butter (or a mix)

4 cups cremini mushrooms, cleaned and sliced

4 cloves garlic, minced

½ tsp salt (adjust to taste)

½ tsp black pepper

½ tsp red pepper flakes (optional)

½ cup grated Parmesan cheese (plus more for serving)

¼ cup chopped fresh parsley

½ cup pasta water (reserved before draining)

Zest of 1 lemon (optional for brightness)


Instructions

1. Bring a large pot of salted water to a boil. Cook the spaghetti or fettuccine until al dente. Reserve ½ cup of pasta water before draining.

2. In a large skillet over medium-high heat, warm the olive oil or butter. Add the mushrooms and let them sear for 3-4 minutes without stirring, then continue cooking for 5-6 minutes until golden brown.

3. Add the minced garlic and cook for 1 minute until fragrant. Season with salt, black pepper, and red pepper flakes.

4. Reduce the heat and add the cooked pasta to the skillet. Pour in the reserved pasta water, grated Parmesan, and lemon zest if using. Toss until well coated.

5. Remove from heat. Stir in fresh parsley and top with more Parmesan. Serve warm.

Notes

For the best mushroom flavor, don’t overcrowd the pan—cook in batches if needed.

Reserve your pasta water before draining; it helps the sauce cling to the noodles.

Add a touch of cream or a poached egg on top for extra richness if desired.
