Ingredients

1 pound ground beef

1 small yellow onion, diced

1 cup canned corn, drained

1 can (15 oz) black beans or refried beans

1 packet taco seasoning mix

1/2 cup water

1 cup salsa (mild or spicy)

2 cups crushed tortilla chips or corn chips

2 cups shredded cheddar cheese

1 cup sour cream

1 avocado, diced

1 roma tomato, diced

2 green onions, chopped

Fresh cilantro (optional)


Instructions

1. In a large skillet over medium heat, cook ground beef and diced onion until browned and softened. Drain excess fat.

2. Add taco seasoning and water. Simmer for 2–3 minutes until thickened. Stir in corn and beans. Remove from heat.

3. Preheat oven to 375°F (190°C). In a greased 9×13-inch baking dish, spread half the crushed tortilla chips.

4. Layer with half the beef mixture, half the salsa, and half the cheese. Repeat layers.

5. Bake uncovered for 18–20 minutes or until cheese is melted and bubbly.

6. Let rest for 5 minutes. Top with sour cream, avocado, tomato, green onions, and cilantro.

Notes

Make it ahead: Assemble and refrigerate for up to 24 hours before baking.
