Description

A festive twist on pizza night, this Cranberry Chicken & Brie Pizza layers creamy brie, roasted chicken, and sweet-tart cranberry sauce on a golden crust. It’s perfect for cozy nights or as a showstopper appetizer during the holidays. Each bite brings a balance of savory richness and fruity brightness.


Ingredients

1 pound pizza dough

1 cup cooked chicken breast, chopped

4 ounces brie cheese, sliced or chopped

⅓ cup cranberry sauce (thick and chunky preferred)

1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon fresh thyme leaves


Instructions

1. Preheat your oven to 450°F. Line a baking sheet with parchment paper or prep a pizza stone.

2. Roll out the pizza dough on a lightly floured surface to your preferred thickness. Transfer to your baking surface.

3. Brush the dough with olive oil to help it brown and keep the crust from getting soggy.

4. Sprinkle shredded mozzarella evenly over the dough.

5. Distribute the brie slices and chopped chicken over the cheese layer.

6. Spoon cranberry sauce over the top—either in dollops or lightly swirled in.

7. Bake for 12–15 minutes until the crust is golden and cheese is bubbly.

8. Remove from oven, sprinkle with fresh thyme, slice, and serve warm.

Notes

Use a pizza stone for a crispier crust and more even bake.

Make sure the cranberry sauce isn’t watery—it should be thick enough to hold its shape on the dough.

For added richness, drizzle a little honey over the pizza right before serving.
