Ingredients

4 ounces dried beef

4 tablespoons butter

4 tablespoons all-purpose flour

2 ½ cups whole milk

½ teaspoon freshly ground black pepper

4 slices thick white or sourdough bread, toasted


Instructions

1. Roughly chop the dried beef into bite-sized strips. If very salty, rinse under cold water and pat dry.

2. In a skillet over medium heat, melt butter. Whisk in flour and cook for 1–2 minutes until golden and fragrant.

3. Gradually pour in milk while whisking constantly to avoid lumps. Bring to a simmer and cook 4–5 minutes until thickened.

4. Stir in the dried beef and cook 2–3 minutes more until heated through.

5. Add black pepper to taste. Serve hot over toasted bread.

Notes

Rinse dried beef to control saltiness—especially if using jarred brands.
