Ingredients
2 large chicken breasts
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons butter
4 cloves garlic, minced
12 oz fettuccine or pasta of choice
2 cups heavy cream
1 1/2 cups grated Parmesan cheese
Fresh parsley, chopped (optional)
Instructions
1. Cut chicken into bite-sized pieces and pat dry. Toss with olive oil, Cajun seasoning, salt, and pepper. Let marinate for 10 minutes.
2. In a skillet, melt butter over medium heat. Add garlic and cook until fragrant. Add chicken and sear until golden and fully cooked, about 4–6 minutes. Remove from skillet.
3. Boil pasta in salted water until al dente. Reserve 1/2 cup of pasta water before draining.
4. In the same skillet, pour in heavy cream. Simmer, then whisk in more Cajun seasoning and Parmesan cheese until smooth.
5. Toss cooked pasta into the sauce, adding reserved pasta water if needed to thin.
6. Add chicken bites back in and stir everything together. Garnish with parsley if desired. Serve hot.
