Ingredients
12 oz rotini pasta
1 lb beef chunks (sirloin, ribeye, or chuck roast)
1 cup heavy cream
4 oz cream cheese
1 ½ cups shredded cheddar cheese
2 tbsp Cajun seasoning
2 tbsp butter
3 cloves garlic, minced
1 tbsp chopped parsley
Salt, to taste
Pepper, to taste
Instructions
1. Boil a large pot of salted water. Cook rotini pasta until al dente, about 8–9 minutes. Drain and set aside.
2. Season beef chunks with Cajun seasoning, salt, and pepper.
3. In a hot skillet, melt 1 tbsp of butter. Sear seasoned beef until browned and cooked through. Remove and keep warm.
4. In the same skillet, melt the remaining 1 tbsp butter. Add minced garlic and sauté for 30 seconds.
5. Pour in the heavy cream and reduce heat. Add cream cheese and stir until fully melted and smooth.
6. Add shredded cheddar cheese and another pinch of Cajun seasoning. Stir until creamy and thick.
7. Add cooked rotini to the sauce and mix until pasta is well coated. Simmer on low for 2–3 minutes.
8. Plate pasta and serve with seared Cajun beef on top or to the side. Garnish with parsley and fresh pepper.
Notes
Let the cream cheese come to room temperature before adding to avoid clumping.
Use freshly shredded cheddar for smoother melting and better flavor.
Add a splash of reserved pasta water if the sauce becomes too thick after combining.
