Creamy Cajun Chicken Linguine with Spicy Garlic Cheese Sauce is a bold, comforting pasta dish loaded with Cajun-spiced chicken, a creamy garlic cheese sauce, and silky linguine. It’s a one-skillet wonder that brings together spicy, cheesy, and creamy in every bite. Perfect for weeknight dinners or weekend indulgence.


Ingredients

1 pound chicken breast, diced

8 ounces linguine pasta

1 tablespoon Cajun seasoning

2 tablespoons butter

3 cloves garlic, minced

1 cup heavy cream

4 ounces cream cheese

1 cup shredded cheddar cheese

1/2 cup diced tomatoes

2 tablespoons chopped parsley

Salt and pepper to taste

Optional: pasta water for thinning sauce


Instructions

1. Season diced chicken with Cajun seasoning.

2. Heat a skillet over medium-high heat with oil and cook chicken until golden brown. Set aside.

3. Cook linguine in salted boiling water until al dente. Reserve 1/4 cup pasta water and drain.

4. In the same skillet, melt butter and sauté minced garlic until fragrant.

5. Pour in heavy cream and simmer. Add cream cheese and stir until melted and smooth.

6. Mix in cheddar cheese until fully melted.

7. Stir in diced tomatoes and a bit more Cajun seasoning. Simmer 2–3 minutes.

8. Add cooked linguine to the sauce. Toss to coat. Use pasta water if needed to loosen the sauce.

9. Return the chicken to the skillet and mix or serve it on the side.

10. Garnish with parsley and serve hot.

Notes

Be sure to not overcook the chicken—sear it until just golden to keep it juicy.

Add a splash of pasta water to adjust sauce consistency before serving.

For extra heat, stir in red pepper flakes or hot sauce to taste.
