Description

Ingredients

2 large chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

2 tablespoons butter (divided)

3 cloves garlic, minced

1 ½ cups heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

10 ounces penne or rigatoni pasta

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons chopped parsley (for garnish)


Instructions

1. Pat the chicken breasts dry and season both sides generously with Cajun seasoning.

2. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Set aside and rest.

3. In a large pot, bring salted water to a boil and cook pasta according to package instructions. Drain and set aside.

4. In the same skillet, reduce heat to medium and add remaining butter. Sauté minced garlic for 30 seconds until fragrant.

5. Pour in heavy cream, stirring to deglaze the pan. Let simmer for 2–3 minutes.

6. Stir in mozzarella and Parmesan cheese. Mix until smooth and melted. Season with salt, pepper, and a pinch of extra Cajun seasoning if desired.

7. Add the cooked pasta to the skillet and toss to coat. Let it simmer 1–2 minutes.

8. Slice the rested chicken and place on top or alongside the pasta.

9. Garnish with chopped parsley and serve hot.

Let the chicken rest before slicing to keep it juicy and flavorful.

Don’t skip the Parmesan—it balances the cream and adds depth.

If reheating, add a splash of cream or milk to loosen the sauce.
