Description

This Creamy Cajun Chicken Pasta with Whipped Roasted Garlic Feta & Crispy Chickpeas is the ultimate comfort dinner. With smoky Cajun-spiced chicken, crispy roasted chickpeas, and a creamy garlic whipped feta over spaghetti, every bite is packed with bold flavor and texture. Perfect for a weeknight meal or casual entertaining.


Ingredients

8 oz spaghetti

1 lb chicken breast or thighs, cut into chunks

1 tbsp Cajun seasoning

1 tbsp olive oil (for chicken)

1 can (15 oz) chickpeas, drained and rinsed

1 tbsp olive oil (for chickpeas)

1 bulb garlic

1 tsp olive oil (for garlic)

1 cup feta cheese, crumbled

4 oz cream cheese, softened

1 tbsp olive oil (for feta)

1 tbsp lemon juice (optional)

2 tbsp parsley, chopped

1 tsp salt (adjust to taste)

½ tsp black pepper


Instructions

1. Preheat oven to 400°F (200°C). Slice the top off a garlic bulb, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until golden and soft.

2. Toss chickpeas with olive oil, salt, and pepper. Roast on a baking sheet for 25–30 minutes until crispy.

3. Cook spaghetti in salted water until al dente. Drain and toss with olive oil. Set aside.

4. Season chicken with Cajun seasoning, salt, and pepper. Heat olive oil in a skillet and cook chicken until browned and cooked through, 6–8 minutes.

5. In a food processor, blend feta, cream cheese, roasted garlic cloves, olive oil, and optional lemon juice until smooth and fluffy.

6. To serve, plate spaghetti and top with Cajun chicken, roasted chickpeas, and a generous scoop of whipped feta. Garnish with parsley and extra Cajun seasoning.

Notes

For the crispiest chickpeas, make sure they are well-dried before roasting.

You can prepare the whipped feta and garlic a day in advance to save time.

Add spinach or arugula for extra greens and color.
