Ingredients
1.5 lbs boneless skinless chicken breasts, cut into chunks
2 tablespoons butter
1 tablespoon olive oil
1 small onion, chopped
3 cloves garlic, minced
8 oz mushrooms (cremini or your choice), sliced
2 tablespoons all-purpose flour
1 cup chicken broth
3/4 cup heavy cream
1 teaspoon Dijon mustard
1/2 teaspoon paprika
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
- Sear Chicken: Season chicken with salt and pepper. In a skillet, heat butter and oil over medium-high heat. Add chicken and cook until browned. Remove and set aside.
- Sauté Veggies: In the same skillet, sauté onion until soft. Add garlic, then mushrooms. Cook until browned and moisture evaporates.
- Make Sauce Base: Sprinkle flour over vegetables. Stir and cook for 1 minute. Gradually add broth while stirring. Simmer until slightly thickened.
- Finish Sauce: Reduce heat and stir in cream, Dijon, and paprika. Simmer gently until smooth and creamy.
- Combine & Serve: Return chicken to skillet. Simmer 5 minutes or until chicken is cooked through. Adjust seasoning. Garnish with parsley.
