Ingredients

1 lb ground beef

1 small yellow onion, diced

3 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

2 cups diced potatoes

1 can (15 oz) corn, drained or 1.5 cups frozen corn

1 can (10 oz) diced tomatoes with green chilies

3 cups chicken broth

1 cup heavy cream

1/2 cup sour cream

4 oz cream cheese, softened

1 tsp smoked paprika

1/2 tsp chili powder

1/2 tsp cumin

Salt and black pepper to taste

Fresh parsley or chives for garnish


Instructions

1. Brown the beef in a large pot or Dutch oven over medium-high heat until fully cooked. Drain excess fat if needed.

2. Add diced onion, garlic, and bell peppers. Cook for 5 minutes until softened and fragrant.

3. Stir in potatoes, corn, and diced tomatoes with green chilies. Add chicken broth and bring to a boil. Reduce heat and simmer for 15–20 minutes or until potatoes are fork-tender.

4. Lower the heat and stir in cream cheese until melted. Then add heavy cream and sour cream, mixing until smooth.

5. Season with smoked paprika, chili powder, cumin, salt, and pepper. Simmer for 5–10 more minutes to blend the flavors.

6. Serve hot, garnished with fresh parsley or chives and optional shredded cheddar. Enjoy with bread or tortilla chips.

Notes

For added depth, try browning the beef with a splash of Worcestershire sauce.
