Ingredients
1 1/2 cups orzo pasta
1 package Boursin garlic and fine herbs cheese
2 1/2 cups vegetable broth
1 cup cherry tomatoes
2 cups fresh spinach
1/2 cup mozzarella cheese
1/4 cup Parmesan cheese
2 tablespoons olive oil
2 cloves garlic
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes optional
Instructions
1. Heat olive oil in a skillet over medium heat and sauté garlic until fragrant then add spinach and cook until wilted
2. Combine orzo sautéed spinach cherry tomatoes Boursin cheese mozzarella Parmesan oregano salt and pepper in a baking dish
3. Pour vegetable broth over the mixture and gently stir to combine
4. Cover with foil and bake at 375 F for 25 minutes
5. Remove foil stir gently add extra cheese if desired and bake uncovered for 10 to 15 minutes until golden and bubbly
6. Let rest for 5 to 10 minutes before serving
Notes
Use fresh spinach for best texture but frozen works if well drained
Add grilled chicken or sausage for extra protein
Stir halfway through baking if you want an extra creamy consistency
