These creamy garlic baby potatoes combine crispy roasted baby potatoes with a luscious garlic-Parmesan cream sauce. Perfect as a side dish for any meal, they deliver big flavor with minimal effort.
Ingredients
1.5 lbs baby potatoes
3 cloves garlic, minced
2 tbsp butter
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tbsp fresh parsley, chopped
1/2 tsp chili flakes (optional)
Salt and pepper to taste
1 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C). Wash and scrub baby potatoes; pat dry.
- Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and tender.
- In a skillet, melt butter over medium heat. Add garlic and sauté 1-2 minutes until fragrant.
- Stir in heavy cream; simmer until slightly thickened. Add Parmesan and stir until melted.
- Add roasted potatoes to the skillet; toss gently to coat in sauce.
- Garnish with chopped parsley and chili flakes if using. Serve immediately.
