Ingredients
1 pound beef tortellini
8 ounces Italian sausage
2 tablespoons olive oil
3 cloves garlic, minced
3 tablespoons garlic butter
1 cup heavy cream
½ cup grated Parmesan cheese
2 cups fresh spinach
Salt and pepper, to taste
Instructions
1. Heat olive oil in a large skillet over medium heat. Add the sausage, breaking it up with a spoon, and cook until browned and fully cooked. Remove and set aside.
2. In the same skillet, sauté the minced garlic in a little olive oil until fragrant (about 1 minute).
3. Pour in the heavy cream. Stir in garlic butter and Parmesan cheese. Simmer for 2–3 minutes until slightly thickened.
4. While the sauce simmers, cook the tortellini in boiling salted water according to the package directions. Drain and set aside.
5. Return the sausage to the skillet. Add the tortellini and toss to coat in the sauce.
6. Add spinach and stir until wilted, about 1–2 minutes.
7. Season with salt and pepper to taste. Serve hot with extra Parmesan if desired.
Notes
For extra richness, add a splash of white wine before simmering the cream.
Use hot Italian sausage if you like a little heat.
Don’t overcook the tortellini—cook just until al dente so it holds up in the sauce.
