Creamy Garlic Mushroom Alfredo Chicken & Potatoes with Basil Pesto

Description

Golden seared chicken, buttery baby potatoes, and mushrooms simmer in a rich garlic Alfredo sauce, topped with vibrant basil pesto. This one-skillet dinner is creamy, cozy, and full of gourmet flavor perfect for weeknights or special occasions.


Ingredients

2 boneless skinless chicken breasts

1 pound baby gold potatoes

8 ounces cremini or baby bella mushrooms, sliced

1 cup heavy cream

4 garlic cloves, minced

½ cup grated Parmesan cheese

2 tablespoons butter

1 tablespoon olive oil

3 tablespoons basil pesto

Salt and pepper, to taste

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Season chicken breasts with salt and pepper. Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken on both sides for 4–5 minutes until golden and cooked through. Remove and set aside.

2. In the same skillet, add the baby potatoes. Sauté for 8–10 minutes until they start to brown. Add a splash of water, cover, and steam until fork-tender. Remove and keep warm.

3. Add more butter if needed, then sauté the mushrooms for 5–7 minutes until golden and their moisture has evaporated.

4. Reduce heat to medium. Add minced garlic and cook for 30 seconds. Pour in the cream and let simmer for 2–3 minutes. Stir in Parmesan until melted and the sauce thickens.

5. Return chicken and potatoes to the skillet. Spoon the sauce over everything and heat through for 2–3 minutes.

6. Drizzle with basil pesto and garnish with parsley. Serve hot from the skillet.

Notes

Cut potatoes evenly so they cook at the same rate.

If the sauce thickens too much, add a splash of cream or broth when reheating.

For extra flavor, toast the garlic in butter before adding the cream.
