Ingredients
1 lb large shrimp, peeled and deveined
1 tablespoon olive oil
salt and black pepper, to taste
½ teaspoon smoked paprika (optional)
8 oz linguine or spaghetti
2 tablespoons butter
5 cloves garlic, minced
½ teaspoon red pepper flakes (adjust to heat preference)
1 cup heavy cream
½ cup grated Parmesan cheese
zest of 1 lemon
1 tablespoon lemon juice
¼ cup chopped sun-dried tomatoes (optional)
¼ cup chopped fresh parsley (plus more for garnish)
salt and pepper, to taste
lemon wedges for serving (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook linguine until al dente. Reserve ½ cup of pasta water, then drain and set aside.
2. In a large skillet, heat olive oil over medium-high. Season shrimp with salt, pepper, and paprika. Sauté 1–2 minutes per side until pink. Remove from skillet.
3. Lower heat to medium. Melt butter in the same skillet. Add garlic and red pepper flakes; sauté for 1 minute.
4. Pour in heavy cream. Simmer for 2–3 minutes. Stir in Parmesan until melted.
5. Add lemon zest, lemon juice, and sun-dried tomatoes. Return shrimp to skillet. Toss to coat.
6. Add drained pasta and reserved water if needed. Toss everything together.
7. Garnish with parsley, extra Parmesan, and lemon wedges. Serve hot.
Notes
Don’t overcook the shrimp — they only need 1–2 minutes per side to stay tender.
Use freshly grated Parmesan for the smoothest sauce.
If your sauce gets too thick, stir in reserved pasta water a little at a time.
