Description

This Creamy One-Pot Broccoli Cheddar Orzo is a quick and cozy dinner made in a single pot. With tender orzo pasta, melty cheddar cheese, and fresh broccoli, it delivers the ultimate cheesy comfort in under 30 minutes. Perfect for busy weeknights or anytime you crave something warm and satisfying.

Ingredients

1 tablespoon butter

2 cloves garlic, minced

1 cup orzo pasta

2 cups vegetable broth

1 ½ cups broccoli florets, chopped small

1 cup shredded cheddar cheese

½ cup milk or cream

½ teaspoon salt

¼ teaspoon black pepper

Instructions

1. Melt butter in a large skillet over medium heat. Add garlic and orzo, sauté for 1-2 minutes until fragrant and lightly toasted.

2. Pour in vegetable broth and bring to a simmer. Cook uncovered for 8–10 minutes, stirring occasionally.

3. Stir in broccoli florets, cover the pan, and steam for 3–4 minutes until broccoli is tender.

4. Reduce heat to low. Stir in milk or cream and shredded cheddar cheese until melted and creamy.

5. Season with salt and pepper. Adjust to taste and serve warm.

Notes

For extra flavor, toast the orzo in butter until golden before adding broth.

Use freshly shredded cheddar for a smoother, meltier sauce.

Add a splash of broth when reheating to keep it creamy.
