Description

This Creamy Pasta Salad is packed with fresh veggies and tossed in a tangy, velvety dressing. Perfect for picnics, potlucks, or as a satisfying lunch on its own. It’s colorful, crunchy, and full of flavor.


Ingredients

12 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers, diced (use a mix of colors)

1/3 cup red onion, finely chopped

3/4 cup mayonnaise

1/2 cup sour cream

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon sugar

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped


Instructions

  1. Cook the rotini pasta in salted water until al dente. Drain and rinse under cold water. Set aside.
  2. Prep all vegetables: halve the cherry tomatoes, dice cucumber and bell peppers, and finely chop red onion.
  3. In a bowl, whisk together mayonnaise, sour cream, Dijon mustard, vinegar, sugar, salt, and pepper.
  4. In a large mixing bowl, toss together the cooked pasta, chopped veggies, and creamy dressing.
  5. Mix until everything is well coated. Chill in the fridge for at least 30 minutes.
  6. Before serving, garnish with chopped fresh parsley.
