Description
A creamy, spicy pasta dish loaded with pepper jack cheese, rotini noodles, sweet bell pepper, juicy tomatoes, and pan-seared chicken. This comfort classic is perfect for weeknight dinners and ready in under 30 minutes.
Ingredients
8 oz rotini pasta
1 tablespoon olive oil
2 boneless skinless chicken breasts
1 cup heavy cream
1 1/2 cups shredded pepper jack cheese
1/2 green bell pepper, diced
1/2 cup cherry tomatoes, halved
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Cook rotini until al dente, drain, and set aside. Reserve 1/2 cup pasta water.
- Season chicken with salt, pepper, and garlic powder. Sear in olive oil over medium-high heat until cooked through. Remove and slice.
- In the same skillet, sauté green bell pepper and cherry tomatoes for 2–3 minutes until just tender.
- Reduce heat and add heavy cream to the skillet. Stir in shredded pepper jack cheese gradually, until smooth and melted.
- Season with garlic powder, onion powder, salt, and black pepper. Stir to combine.
- Add cooked pasta to the sauce and toss to coat. Use reserved pasta water to adjust consistency if needed.
- Fold in sliced chicken. Serve immediately with a garnish of cracked pepper or fresh parsley.
