Description

This Creamy Ranch Chicken Crock Pot recipe is a rich, comforting slow-cooked dinner that blends tender chicken, buttery potatoes, ranch seasoning, cream cheese, and crispy bacon into a one-pot wonder. It’s perfect for busy weeknights or cozy weekends, delivering a creamy and savory meal with minimal effort.


Ingredients

2 pounds chicken thighs or breasts

1.5 pounds Yukon gold potatoes, diced

8 ounces cream cheese, softened

1 cup sour cream

1 packet ranch seasoning mix (about 1 ounce)

1 cup chicken broth

2 cloves garlic, minced

1/2 cup cooked bacon bits

2 tablespoons fresh chopped parsley or chives (optional garnish)


Instructions

1. (Optional) Sear the chicken in a hot skillet with a little oil for 2–3 minutes per side to develop flavor.

2. Add diced potatoes and minced garlic to the bottom of the crock pot. Sprinkle half the ranch seasoning over them.

3. Place chicken on top of the potatoes. Pour in the chicken broth and sprinkle the remaining ranch seasoning on the chicken.

4. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is fully cooked and tender.

5. Add cream cheese and sour cream about 30 minutes before serving. Stir to combine until smooth and creamy.

6. Top with crispy bacon bits and garnish with parsley or chives before serving. Enjoy!

Notes

Let the cream cheese soften at room temperature before adding—it blends easier into the sauce.

For added flavor, sear the chicken first before placing it in the slow cooker.
