Ingredients
1 package (9 oz) cheese tortellini
1 tablespoon olive oil
2 cloves garlic, minced
1 cup cherry tomatoes, halved
2 cups baby spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 teaspoon dried Italian herbs
Salt and black pepper to taste
Optional: red pepper flakes
Instructions
- Bring a pot of salted water to a boil. Cook tortellini according to package directions, then drain.
- Heat olive oil in a skillet over medium heat. Add garlic and cook for 1 minute.
- Add cherry tomatoes and sauté for 3–4 minutes until soft.
- Stir in spinach and cook until wilted.
- Lower heat, pour in heavy cream, and simmer for 2–3 minutes.
- Add Parmesan and Italian herbs, stirring until melted and slightly thickened.
- Add cooked tortellini and stir to coat. Season to taste.
- Serve hot with extra Parmesan and pepper.
