Description

This Creamy Tortellini recipe features tender cheese tortellini bathed in a rich, garlicky cream sauce with wilted spinach and juicy cherry tomatoes. Perfectly balanced and full of flavor, it’s a satisfying dish that’s easy enough for weeknights but elegant enough for guests.


Ingredients

1 package (9 oz) cheese tortellini

1 tablespoon olive oil

2 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 teaspoon dried Italian herbs

Salt and black pepper to taste

Optional: red pepper flakes


Instructions

  1. Bring a pot of salted water to a boil. Cook tortellini according to package directions, then drain.
  2. Heat olive oil in a skillet over medium heat. Add garlic and cook for 1 minute.
  3. Add cherry tomatoes and sauté for 3–4 minutes until soft.
  4. Stir in spinach and cook until wilted.
  5. Lower heat, pour in heavy cream, and simmer for 2–3 minutes.
  6. Add Parmesan and Italian herbs, stirring until melted and slightly thickened.
  7. Add cooked tortellini and stir to coat. Season to taste.
  8. Serve hot with extra Parmesan and pepper.
