These Crispy Baked Cauliflower Bites with Garlic Sauce are the ultimate guilt-free snack. Roasted to golden perfection and finished with a creamy garlic sauce, they’re a crunchy, flavor-packed appetizer or meatless main that everyone will love.
Ingredients
1 large head cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon salt
½ teaspoon black pepper
1 cup panko breadcrumbs
2 tablespoons chopped fresh parsley
½ cup Greek yogurt or mayo
1 tablespoon lemon juice
1 clove garlic, minced
Pinch of salt (for sauce)
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
2. Cut the cauliflower into large bite-sized florets and discard the core.
3. In a mixing bowl, combine olive oil, garlic powder, smoked paprika, salt, and pepper. Toss the florets until coated.
4. Press each floret into the panko breadcrumbs to coat them evenly.
5. Arrange florets on the baking sheet in a single layer.
6. Bake for 25–30 minutes, flipping halfway, until golden and crispy.
7. While baking, mix Greek yogurt (or mayo), lemon juice, minced garlic, and a pinch of salt in a bowl to make the sauce.
8. Let the sauce sit for 10 minutes to develop flavor.
9. Serve cauliflower bites hot, drizzled with garlic sauce and garnished with fresh parsley.
Notes
For extra crispiness, broil the bites for the last 2 minutes of baking.
You can prepare the sauce ahead and store it in the fridge for up to 3 days.
Make it spicy by adding a pinch of cayenne or chili flakes to the breadcrumb mix.
