Ingredients
2 large chicken breasts
1 cup sharp cheddar cheese, grated
2 cups Ritz crackers or buttery crackers, crushed
2 large eggs, beaten
1/2 cup all-purpose flour
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
4 tablespoons butter, melted
Instructions
1. Pound chicken breasts to even thickness and season with salt and pepper.
2. Prepare three bowls: one with flour, one with beaten eggs, one with crushed crackers mixed with grated cheddar.
3. Dip chicken in flour, then eggs, then coat in cracker-cheese mixture.
4. Place chicken in greased baking dish and bake at 350°F (175°C) for 30-35 minutes, until golden and cooked through.
5. While baking, combine cream of chicken soup, sour cream, and melted butter in a saucepan over low heat until smooth.
6. Drizzle sauce over baked chicken or serve on the side. Garnish with parsley if desired.
Notes
For extra crispiness, use panko crumbs mixed with crackers.
Add cayenne or paprika to the coating for a spicy kick.
For juicier results, use chicken thighs instead of breasts.
