Description

This Crispy Cheddar Chicken is a crunchy, cheesy comfort classic that bakes up golden and juicy with a buttery cracker coating. Served with a creamy sauce or as-is, it’s a crowd-pleaser for any dinner table.

Ingredients

2 large boneless, skinless chicken breasts (sliced in half lengthwise)

1 1/2 cups shredded sharp cheddar cheese

1 1/2 cups crushed Ritz crackers (about 1 sleeve)

1/2 cup all-purpose flour

2 large eggs

1/4 cup milk

1/2 tsp garlic powder

1/2 tsp paprika

4 tbsp unsalted butter (melted)

2 tbsp chopped fresh parsley (for garnish)

Optional sauce:

1 can (10.5 oz) cream of chicken soup

1/2 cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Set up three bowls: one with flour + garlic powder + paprika, one with whisked eggs and milk, and one with shredded cheese and crushed crackers.
  3. Dredge each chicken cutlet in the flour mixture, then dip in the egg-milk mix, and finally coat in the cheddar-cracker mixture, pressing to adhere.
  4. Place coated chicken on the baking sheet. Drizzle melted butter over each piece.
  5. Bake for 30–35 minutes, or until chicken is golden and reaches 165°F internal temperature.
  6. (Optional) In a saucepan, heat cream of chicken soup and sour cream together until warm and smooth. Drizzle over chicken before serving.
  7. Garnish with parsley and serve hot.
