Ingredients
1 tablespoon oil or butter
2 cups shredded cooked chicken (rotisserie preferred)
1 tablespoon taco seasoning
1 red bell pepper, diced
1/2 red onion, diced
1 1/2 cups shredded cheddar cheese
4 large flour tortillas
Instructions
1. In a bowl, mix shredded chicken with taco seasoning and a splash of water or oil until well coated.
2. In a skillet over medium heat, sauté diced red bell pepper and red onion in a little oil until softened but still vibrant.
3. Lay one tortilla flat. On half of it, sprinkle some cheese, then a layer of seasoned chicken, sautéed veggies, and more cheese. Fold the tortilla over.
4. Heat a clean skillet with butter or oil. Cook the folded tortilla until golden and crisp on each side, about 2-3 minutes per side. Press with a spatula.
5. Let rest for 1 minute, then slice into wedges and serve warm with your favorite dipping sauce.
Notes
Don’t overstuff the quesadilla or it may spill while cooking.
Use freshly grated cheese for the best melt and texture.
