Ingredients
2 pounds Yukon Gold potatoes
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
⅓ cup parmesan cheese, freshly grated
2 tablespoons chopped fresh parsley or thyme
1 teaspoon salt
½ teaspoon black pepper
¼ teaspoon red pepper flakes (optional)
Instructions
1. Wash and thinly slice Yukon Gold potatoes to about ¼-inch thick.
2. Soak slices in cold water for at least 20 minutes, then drain and pat dry thoroughly.
3. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium heat.
4. Arrange potato slices in a single or overlapping layer. Cook undisturbed for 6–8 minutes.
5. Flip carefully, season with salt, pepper, and red pepper flakes if using. Add minced garlic and remaining butter.
6. Sprinkle parmesan evenly and add fresh herbs. Cook until golden and crispy on both sides.
7. Remove from heat and serve immediately.
Notes
Soaking the potatoes helps achieve extra crispiness—don’t skip it if you want crunch.
Flip gently with a wide spatula to keep slices intact and golden.
Add garlic after the first flip to avoid burning and get that perfect roasted flavor.
