This cheeseburger quesadilla recipe takes all the juicy, savory flavors of a classic cheeseburger and wraps them in a crisped flour tortilla. With melty cheddar, seasoned beef, pickles, and a hint of ketchup and mustard, these golden quesadillas come together fast for an easy lunch or fun weeknight dinner. Ingredients
1 pound ground beef
1 ½ cups shredded cheddar cheese
1 cup diced tomatoes
½ cup chopped pickles or pickled jalapeños
½ cup diced onion
2 tablespoons yellow mustard (optional)
2 tablespoons ketchup (optional)
4 flour tortillas (8-inch)
2 teaspoons butter or oil for cooking
Instructions
1. In a skillet over medium heat, cook the ground beef until browned. Season with salt and pepper. Drain excess fat and set aside.
2. Prep the fillings: dice the tomatoes, onions, and pickles. Shred the cheese if needed.
3. Lay a tortilla flat. On one half, sprinkle a layer of cheese, add beef, tomatoes, onion, pickles, a drizzle of mustard and ketchup (if using), then more cheese. Fold the tortilla in half.
4. Heat a skillet over medium and melt a bit of butter or oil. Cook each quesadilla 2–3 minutes per side until crispy and golden.
5. Remove from skillet, rest for 1 minute, then slice into wedges and serve.
Notes
Use freshly shredded cheese for better melting and texture.
Don’t overfill the quesadillas; this keeps them easy to flip and crisps both sides evenly.
Reheat leftovers in a skillet or oven to keep them crisp—skip the microwave if possible.
