Ingredients
1.5 pounds chicken breasts, cubed
2 tablespoons Cajun seasoning
3 cloves garlic, minced
1 small onion, chopped
1/2 cup sun-dried tomatoes, chopped
1 cup chicken broth
1 cup heavy cream
4 ounces cream cheese
1/2 cup grated Parmesan cheese
12 ounces penne pasta
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Cube the chicken breasts and toss with Cajun seasoning until well coated.
2. Add chicken, garlic, onion, and sun-dried tomatoes to the slow cooker. Pour in chicken broth.
3. Cook on low for 4–5 hours or high for 2–3 hours, until chicken is fully cooked.
4. Stir in cream cheese and heavy cream. Cover and cook for 20–30 minutes until the sauce is creamy and smooth.
5. Meanwhile, cook penne pasta according to package directions until al dente. Drain and set aside.
6. Add cooked pasta and Parmesan cheese to the slow cooker. Stir to combine and coat with the sauce.
7. Serve hot, garnished with fresh parsley if desired.
