Ingredients

1 pound lean ground beef

1 tablespoon olive oil

1 small onion, diced

1 green bell pepper, diced

1 red bell pepper, diced (optional)

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Worcestershire sauce

½ teaspoon dried oregano

½ teaspoon paprika

1 can (10.5 oz) cream of mushroom soup

¾ cup beef broth

1 block (8 oz) cream cheese, cubed

1 package (20 oz) refrigerated cheese tortellini

1½ cups shredded provolone or mozzarella cheese

Fresh parsley, chopped (optional)


Instructions

1. In a skillet over medium heat, cook the ground beef until browned. Drain the grease and add beef to the crock pot.

2. In the same skillet, heat olive oil. Sauté onion, bell peppers, and garlic until softened, about 3-4 minutes. Transfer to the crock pot.

3. Add salt, black pepper, Worcestershire sauce, oregano, paprika, cream of mushroom soup, beef broth, and cubed cream cheese to the slow cooker. Stir to combine.

4. Cover and cook on low for 4 hours, stirring once halfway through to help the cream cheese melt.

5. Add tortellini during the last 30–45 minutes of cooking. Stir well.

6. Sprinkle shredded provolone or mozzarella on top. Cover and cook another 10–15 minutes until melted and bubbly.

7. Garnish with chopped parsley if desired. Serve hot.

Notes

For best texture, add refrigerated tortellini during the final 30-45 minutes.

You can swap ground beef for chicken or plant-based meat.

Add mushrooms or hot sauce to customize it to your taste.
