Description

Ingredients

2 lbs boneless skinless chicken breasts or thighs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

0.5 teaspoon salt

0.5 teaspoon black pepper

0.5 cup chicken broth

10.5 oz can cream of chicken soup

10.5 oz can cream of mushroom soup

10 oz can Rotel tomatoes with green chilies (undrained)

8 oz Velveeta cheese, cubed

0.5 cup sour cream

0.5 teaspoon chili powder (optional)

12 oz uncooked spaghetti

0.5 cup shredded cheddar cheese (optional)

Fresh parsley, chopped (for garnish)


Instructions

1. Place chicken in the bottom of the crock pot. Sprinkle with garlic powder, onion powder, paprika, salt, and black pepper. Pour chicken broth over the top.

2. Add cream of chicken soup, cream of mushroom soup, Rotel (with juice), Velveeta cubes, sour cream, and chili powder. Do not stir.

3. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until chicken is fork-tender.

4. Shred the chicken directly in the pot using two forks. Stir everything together until fully blended and cheese is melted.

5. Cook spaghetti noodles according to package directions, drain, and add to the crock pot. Stir well to coat.

6. Optional: Sprinkle shredded cheddar cheese on top. Cover for a few minutes to melt.

7. Garnish with chopped parsley and serve warm.

Notes

If you’re using pre-cooked chicken (like rotisserie), add it during the last hour to avoid overcooking.

For a spicier version, use hot Rotel or add crushed red pepper flakes.

Stir in a splash of milk when reheating leftovers to bring back the creamy texture.
