Crock Pot Rotel Dip is a creamy, cheesy, and savory crowd-favorite perfect for parties, game day, or cozy nights at home. Made with ground beef, Velveeta cheese, and spicy Rotel tomatoes, it’s a classic slow cooker appetizer that takes minimal effort and delivers big flavor.
Ingredients
1 pound ground beef
16 ounces Velveeta cheese, cubed
10 ounces Rotel tomatoes with green chilies (1 can, undrained)
4 ounces cream cheese (optional)
1 teaspoon garlic powder (optional)
1 teaspoon onion powder (optional)
1 teaspoon taco seasoning (optional)
Toppings: diced tomatoes, chopped cilantro, jalapeños (optional)
Instructions
1. Brown the ground beef in a skillet over medium-high heat until fully cooked. Drain excess grease.
2. Cut the Velveeta cheese into small cubes.
3. In a Crock Pot, add cooked ground beef, cubed Velveeta, and the can of Rotel tomatoes (with juices).
4. If using, add cream cheese and seasonings.
5. Cover and cook on low for 2 to 3 hours, stirring occasionally until melted and smooth.
6. Switch to the “warm” setting to serve.
7. Garnish with optional toppings and serve with tortilla chips or veggies.
Notes
For a thinner dip, stir in a splash of milk just before serving.
You can substitute ground beef with spicy sausage for extra flavor.
Leftovers can be refrigerated for up to 4 days and reheated gently on the stovetop or microwave.
